We started with the Karaage, ried soy-marinated chicken thigh with karashi mayonnaise. Crisp on the outside, juicy and tender within, Mochiko’s karaage is a study in contrast. Each piece of soy-marinated chicken delivers a burst of umami, followed by the gentle heat of karashi mayonnaise. It mirrors the tactile ritual of winding the Speedmaster Chronoscope’s hand-wound Caliber 9908. Both demand attention, both reward precision. Just as the Chronoscope’s movement hums with the energy of craftsmanship, each golden bite crackles with care.
Playful in name yet profound in flavor, Mochi Mochi Panic! is a dance of texture and timing. The chew of the mochi contrasts the savory depth of soy-glazed pork and the crisp edge of charred bean sprouts. It brings to mind the Chronoscope’s dial, where tachymeter, pulsometer, and telemeter scales interlace in concentric harmony. Each circle serves a purpose, measuring a different rhythm of life, much like each component in this dish contributes to a delicious, cohesive whole.
The Hokkaido Smashburger is comfort refined. The soft milk bun, which is one of the best I’ve ever had in my life, gives way to layers of juicy, perfectly seasoned beef, melted cheese, caramelized onions, pickes, and the surprising spark of yuzu kosho mayo. It’s a familiar form elevated by precision, a concept that resonates deeply with the Chronoscope. Omega took the iconic Speedmaster design and layered it with new complexity: dual-register subdials, a hand-wound chronograph movement, and a sculpted steel case. Each bite of this burger, like each function of the watch, builds satisfaction through balance and detail.
I have a confession to make. Anytime I see ramen on a menu, I’m compelled to order it, and this time is no different. This bowl of shio ramen is quiet sophistication. The broth glows with clarity, carrying gentle sweetness from scallop and chicken. Silken chashu pork and soft-boiled tamago rest beneath bright greens and crisp negi. It embodies restraint and refinement, the culinary equivalent of the Chronoscope’s silver dial, where every element finds its place without excess.
