About once a month, I have the opportunity to go out to dinner in Cincinnati with my fianceé on a double date with her friends, a couple that we’re very fond of, and have an experience that’s always amazing. And on this episode of Time & Taste, I’m going to tell you about one of those experiences.

At Wildweed in Cincinnati, the menu doesn’t follow trends, it redlines past them. This boundary-pushing restaurant is a flavor-fueled dream of Southern roots, global intuition, and chef-driven bravado. Dishes arrive with force and finesse, precision and swagger. Launch Control: El Camino Miche

It starts with crust. A hulking wedge of house-made miche (sourdough bread) arrives with a side of green-flecked herb butter infused with fennel pollen. Creamy, earthy, warm, and charged with lift, it sets the tone like the hum of an engine just before ignition.

First Acceleration: Beet Salad

This dish is all contrast. Deep purple and golden beets dressed in pistachio emulsion and scattered with rose crumble and citrus. It’s floral, nutty, and acidic, like an overbuilt suspension system that somehow floats.

Edge Grip: Beef Tartare

Here comes the heat. A punchy blend of kimchi and yuzu kosho folded into raw beef, topped with silky egg emulsion and paired with crispy seed crackers. It’s brash and balanced, raw power refined.

I know this isn’t for everyone, having raw beef as an ingredient, but it’s fantastic!

Road-Ready Comfort: Kentucky Rye Gramigna

Lamb ragu from Freedom Run Farm clings to rye pasta, something I’ve never tried before but am a fan of now, cut with black olive and sorghum vinegar, finished with curls of Anabasque cheese. It’s deep and savory with sudden bursts of brightness, like a downshift that snaps you into your seat.

Lateral Genius: Quark & Spring Onion Cappelletti

I’ll be honest, I wasn’t expecting to like this one, but I’m glad we ordered it, because it’s fantastic! Delicate parcels filled with spring onion and quark, bathed in a green garlic broth and studded with peas, country ham, and serrano chili. An incredible explosion of flavor and just like driving a high performance vehicle, every bite corners differently.

Culinary Aero Kit: Striped Chicken Tortelli

This one’s the star of the show! These twisted tortelli look like they’ve been painted with racing stripes. Such and interesting design! Inside: shrimp and chicken. Outside: fried shallot, nuoc cham vinegar, and coriander. Each element moves at its own pace but finishes in tandem. Whatever you do, make sure you order this dish. Trust me.

Aero-Tuned Elegance: Ricotta Kale Anolini

I’m not sure how they achieved this, but it’s a beautiful green dish that manages to feel both wild and clean. Kale emulsion pools beneath ricotta-filled anolini, made perfectly al dente, garnished with pine nuts and shatteringly crisp kale. Botanical, lush, and torque-loaded.

Downforce and Depth: Lasagna

Nothing about this lasagna is traditional at all. Spicy pork ragu, tagine-spiced tomato sauce, citrusy ricotta, and layers that defy gravity. It sits tall, eats rich, and finishes with unexpected lift. A must have.

Next is dessert. And this section I’m going to call…

High-Octane Finishers:

Almond Cake: With apple rosette, kabocha squash ice cream, and caramelized white chocolate, this is performance in dessert form.

Goat Milk Pannacotta: Citrus cells, rose meringue, olive oil, and mint. Light, bright, and razor sharp.

Beeswax Ice Cream: I’m a huge fan of ice cream and I’m having this every time I go back. The combination of olive oil, Maldon salt, honey, and pollen, creates a delicate balance of fat, salt, and floral tones.

The Pairing
